1. Chicken – 1 kg (cut into 6 pcs)
2. Basmati Rice – 3 cups (soaked and drained)
3. Onion – 1 (big, chooped)
4. Arabic Spice Mix – 1 tbsp
5. Pepper Powder – 1 tsp
6. Maggi Cube – 1
7. Coriander Seeds – 1 tbsp
8. Pepper Corns – 1 tbsp
9. Cardamom – 5
10. Cloves – 5
11. Bay Leaves – 2
12. Dry Lemon – 2

14. Oil
15. Potato – 1 (big, sliced)
16. Brinjal – 1 (big, sliced)
17. Tomato – 1 (big, sliced)
18. Coriander Seeds – 1 tbsp
19. Pepper Corns – 1/2 tbsp
20. Cardamom – 3
21. Cloves – 3
22. Cinnamon Stick – 1 small piece
23. Dry Lemon – 1 (small)

Process to make the Maqluba Recipe

The cooking process of maqluba rice dish is very interesting. And even you make this recipe, and then it looks like the rice cake you make with chicken or lamb. Now let’s get to know the steps that you have to follow for making the maqluba rice. And these steps are mentioned here as in the following manner:

  • The first and the foremost thing that you have to do is wash the chicken properly and then cut it into sliced long pieces.
  • Then take a pan and put some ghee or oil in it. And then add the onion, vegetables and all the spices and sauté them until the onion changes its color to golden brown.
  • Once the color gets changed, then you have to add the chicken slices into it. And leave it for getting cooked to 80% of its cooking ratio. You must have to check time to time that chicken do not get cooked properly.
  • Meanwhile you have to wash the basmati rice and then take one more pan and add oil or ghee into it.
  • Then add the rice and salt according to the taste.
  • Once you do that then add water. And the quantity of water must be 1 ½ times the quantity of rice. Usually we add twice the ratio. But here we have to cook the rice up to 90%.
  • And when both the rice and chicken gets cooked, then you have to turn off the gas flame.
  • Now you have to take a bowl, place a butter paper and Greece it with oil. Then put the slices of chicken and on it then place the rice.
  • Then keep it in the oven or any big bowel in which the left-over chicken and rice gets cooked.
  • After 10-15 minutes, you have to keep it out and then lift it to upside down.
